Shimano Road 11-speed combined with MTB 11-speed: the Shiftmate 8A from Jtek Engineering

The Jtek Shiftmate adapts the transmission ratios of incompatible shift components to each other. The shifter cable runs through the Shiftmate, which uses a special shifting wheel to change the cable ratio and match the shift levers.
With the Shiftmate 8A (Shiftmate Barrel) you can combine Shimano Road 11-speed STIs with Shimano MTB 11-speed derailleurs. This means you can use racing bike handlebars while having access to an off-road gradation, such as on a cyclocross bike. If you want to go in the other direction, i.e. use a Shimano MTB 11-speed shifter with Shimano 11-speed road rear derailleur, mount the Shiftmate onto the shifter handlebar.
Jtek Engineering was founded in 2003 in the USA and is now based in Great Britain. It offers high quality and well thought-out products that can be used to solve compatibility problems in an elegant way.

It does its job very well and for a lower price than the Wolftooth Tanpan. It's also nicely finished, which helps.

The setup is slightly fiddly: took me a couple of attempts before getting the perfect cable routing and cable tension but, once I got there, the shifting quality is very good.

A word of warning: do not move the derailleur manually (for example, if your're setting the limit screws) when you threaded the cable on the wheel, or you'll have to start over!

3500 km update: the thing is as good as impervious to rain, dust and mud, as long as you clean it once in a while and keep it oiled (oiled, not greadsed).

Also, I bought a second one for another gravel build: once you know how to handle the cable routing around the wheel, the setup becomes a lot less fiddly. Coupled with R7000 STIs and an XT RD-M8000 rear mech, it's a killer.
